Blueberry Cake

  • 1/2 cup of shortening
  • 1/4 tsp. of salt
  • 1 tsp. of vanilla
  • 1 cup of sugar, divided
  • 2 eggs, yolks and whites separated
  • 1 and 1/2 cups of flour
  • 1 tsp. of baking powder
  • 1 and 1/2 cups of fresh or frozen blueberries


Step 1

In a large bowl cream the shortening, salt and vanilla. Add in 3/4 cup of sugar and the egg yolks and mix well. Mix in the flour and baking powder.

Step 2

In a medium bowl beat the egg whites until they reach stiff peaks. Beat in 1/4 cup of sugar.

Step 3

Gently fold the egg whites into the batter. Coat the berries with a light dusting of flour and fold berries into the batter.

Step 4

Pour batter into a greased 8x8 inch cake pan. Sprinkle with a little granulated sugar. Bake at 350 degrees 50-60 minutes or until a toothpick inserted into the cake comes out clean.
