Blueberry Coffeecake

  • 1 cup of sugar, divided
  • 2 1/3 cups of all-purpose flour, divided
  • 2 1/2 tsps. of baking powder
  • 1/2 tsp. of salt
  • 1 egg
  • 1/2 cup of milk
  • 1/4 cup of melted shortening
  • 2 1/2 cups of blueberries
  • 1/4 cup of butter
  • 3/4 tsp. of cinnamon


Step 1

Sift 1/2 cup of sugar, 2 cups of flour, baking powder and salt into a large bowl.

Step 2

Make a well in the flour mixture and add the egg, milk and shortening. Mix together. The mixture will be thick.

Step 3

Spread the mixture onto the bottom of a 13x9 inch pan.

Step 4

Cover with blueberries.

Step 5

In a small bowl make a crumb mixture using 1/2 cup of sugar, 1/3 cup of flour, the butter and the cinnamon.

Step 6

Sprinkle the mixture on top of the blueberries and bake at 350 degrees for 40-50 minutes.
