Crispy, Fried Chicken

  • 1 whole chicken, cut in 8 pieces
  • Salt
  • Fresh ground pepper
  • 3 cups of flour
  • Canola oil, for frying
  • 1 quart of buttermilk


Step 1

Season the chicken with salt and fresh ground pepper.

Step 2

Place the chicken in the buttermilk to soak for at least 15 minutes or overnight depending on how much time you have. (Soaking makes the chicken more tender.)

Step 3

On a large plate combine the flour with salt and pepper. Coat the chicken pieces completely in the flour mixture.

Step 4

In a large cast-iron skillet, heat 1 inch of canola oil to 350 degrees.

Step 5

Cook several pieces of chicken at a time for 6 minutes on each side, until the meat is no longer pink.

Step 6

Drain the chicken well on paper towels and season with salt.
