- 4 Tbsps. of butter
- 2 tilapia fillets, 6-8 ounces each
- 4 sprigs of fresh thyme
- 2 small lemons, 1 juiced and 1 thinly sliced
- 1 Tbsp. of flat-leaf parsley, finely chopped
- Salt and pepper
Melt the butter over medium-high heat in a large cast-iron skillet.
Season the tilapia with 1/2 a tsp. of salt and 1/2 a tsp. of pepper and place the tilapia into the heated skillet. Place the lemon slices and thyme over the fish.
Cook the fish by spooning the butter from the pan over the fish until it is cooked through, about 5 minutes. Remove the fish and lemon from the pan to a serving platter.
Remove the skillet from the burner and add the lemon juice to the pan, using a spoon to scrape the flavorful, brown bits off of the bottom of the pan. Spoon the sauce over the fish and top with the fresh parsley.
