Light and Creamy Macaroni Salad

  • 2 cups of dry elbow macaroni pasta
  • 1/2 cup of light mayonnaise
  • 1/2 cup of sour cream
  • 1 cucumber, peeled, seeded and finely chopped
  • 2 stalks of celery, finely chopped
  • 1/2 a cup of chopped fresh dill
  • 4 Tbsps. of lemon juice
  • Salt and pepper, to taste


Step 1

Cook the pasta according to package directions. Drain and cool under cold water.

Step 2

Combine the remaining ingredients in a large bowl. Add the macaroni noodles and gently stir until combined. Serve cold and refrigerate any leftovers.
