Mom’s Blueberry Pancakes2013-11-05

- 1 egg
- 1 cup of all-purpose flour
- 3/4 of a cup of milk
- 1 Tbsp of sugar
- 2 Tbsps of melted shortening or vegetable oil
- 3 tsps. of baking powder
- 1/2 tsp. of salt
- 1/2 a cup of fresh or frozen blueberries
In a large bowl beat the egg with a fork or whisk until fluffy.
Add the next six ingredients to the egg and mix until combined. Gently stir in the blueberries careful not to crush them.
Heat griddle to medium and lightly grease.
Use 3 tablespoons of batter for each pancake and cook until the pancakes are fluffy and slightly dry around the edges. Flip pancakes and cook until browned.
Sit down, relax and enjoy your fluffy, delicious pancakes.
