Refreshing Lemon Cookies2014-03-23

- 2 cups of all-purpose flour
- 1/2 tsp. of salt
- 1/2 tsp. of baking soda
- 3 Tbsps. of lemon zest, divided
- 1/3 cup plus 2 Tbsps. of lemon juice, divided
- 1/2 cup of softened butter
- 1 cup of sugar
- 1 egg
- 1 tsp. of vanilla extract
- 2 cups of confectioners' sugar
Preheat the oven to 350 degrees. In a small bowl combine the flour, salt, baking soda, and 1 tbsp. of lemon zest.
In a large bowl beat together the butter and sugar until fluffy. Add the egg, vanilla, and 2 Tbsps. of lemon juice. Beat until combined. Gradually beat in the flour mixture until combined.
Drop by heaping tablespoon onto ungreased cookie sheets. Leave 1 inch between cookies for spreading. Bake until edges are golden brown, about 15-20 minutes. Move to cooling rack and allow to cool completely.
While the cookies cool, make the glaze by combining the confectioners' sugar, 1/3 cup of lemon juice and 2 Tbsps. of lemon zest.
Spread the glaze over cooled cookies and allow the cookies to set for 1 hour before serving.
